Caerthe's Cooks Guild

Caerthe's cooks guild is designed to further the art and science of cooking in the Barony of Caerthe (Denver, CO.)  Usually one meeting per month is facilitated by Mistress Katherine Holford, the guild head.  Meetings are based around a topic, always  include discussion, often there is a hands-on activity, sometimes hand-outs are available, and we always share food.  Garb is preferred, but not required. Experience is not necessary.
Newcomers are ALWAYS WELCOME!

The bad news is that due to unforseen circumstances, Dame Hauviette will not be coming out to Denver at this time. We'll hope she will be able to visit us in the future, though.

The August Cooks Guild meeting will be the evening of Sunday, August 1st, beginning at 4:00 p.m. Unfortunately, our honored guest, Dame Hauviette d'Anjou, and the author of the e-book "Celebration at the Saraya", will be unable to visit Caerthe at this time.

We will still have a Turkish-style theme at the home of Mistress Kate, 910 Milwaukee Street, Denver, CO, so bring your favorite Turkish dish, or perhaps try something new to share. If you own a copy of "Celebration at the Saraya", this is the perfect opportunity to try a recipe. A grill will be available. Garb preferred. Newcomers (to the Guild or to Caerthe) always welcome!

For Pot-lucks, if possible, please bring a card with the recipe and information on your dish. I know fellow guild members would be very interested. I would like to encourage these information cards at future Cooks' Guild events as well, so we can create a recipe library of some of the Caerthen cooks' special dishes for future reference (and perhaps a even a cookbook someday!)

AUG:
In August, we have a unique opportunity to host Dame Hauviette (Chef Channon), who will be in Denver to teach Turkish Cooking 101 and a presentation of her Turkish tour at a local convention. Dame Hauviette is the author of Celebration at the Sarayi and is willing to share her recent Turkish Tour presentation to us (see below).

So far, plans are a late afternoon/evening get together on Sunday, 8/1, at my place, before she flies back to Michigan the next day. More information will follow, as plans are finalized, but do mark your calendars for this chance to meet her

From Hauviete: I would like to share my photo journey through Turkey if anyone is interested- Turkey through the eyes of a Cook- 18 days of food and history- it was amazing. I just received a new resource from Turkey, although secondary research, it is a fount of information for pre-16th C Turkish culinary history- and the images are pretty impressive. Some of the recipes designed by Master Chefs in Turkey are pretty impressive, others not so.

Future Possibilities: Visiting Haystack Mountain Goats dairy farm, a trip to Sakura Square, possibly during the Cherry Blossom festival, and planning another herb garden meeting like the one Kestral kindly hosted in her beautiful garden.

Other previously suggested meetings themes: Mistress Hinoki (Rowen) providing a Japanese Tea Ceremony, brewing, outdoor firepit cooking (possibly a weekend campout); practicing period table setting, carving and service, as instructed by period manuscripts preparing herbal/cooking recipes for largesse, outside evening (summer) meetings featuring Russian and/or Mongolian, middle-eastern, Indian or Japanese foods, or a Japanese Snow-Viewing, Russian easter-egg decorating, choosing and redacting a recipe from period sources, and the long over-due Fritters Workshop II.

Sounds like a busy year!

The July meeting for the Caerthen Cooks Guild was at St. Sebastian's Tourney on July 17th. Cooks Guild provided a Donation Lunch beginning with our hand-made Beef Sausages and ending with the traditional decorated "Arrow" cookies, and in between many other special dishes prepared by Guild members.

Thank you all for your amazing help and food. Cecelia posted her thanks on the Caerthen list, and said that it wouldn't be the same at St. Sebastian's without the Guild lunch. Once again, it was an amazing meal. Here's the list of people who are due many, many thanks:

Friday, June 4, 2010 Cooks guild had a relaxing Friday night meeting with friends from near, far, and really far away. Mistress Ursula brought a delightful B'stella (middle eastern chicken almond and filo pie), Lady Tanwen assisted with paper goods and yummy fresh bratwurst, Lord William P provided smoked sausage and a good aged Gouda, Lady Bruyere (yes, visiting from FAR away) brought delish fresh cherries, Don Adam and Lady Elsabeth (yep more visitors from not quite as far off, but much missed nonetheless) were able to join us as well, oh and I supplemented with HotSour noodles (in the manner of Master Hagar) and threw a steak on the grill. Since we were all VERY casual I skipped taking photos, but I believe everyone had a very good time. (Mistress Kate, you were missed ;-)

 

Saturday, May 1 2010 While I had other obligations that day Cooks Guild provided a donation lunch at Mountain Mayhem on May 1st. All profits were donated to the travel fund for our Baron and Baroness.

Menu:

Beef Y-stewed served on bread trencher slices (beef slowly cooked with seasonings until tender)
Spring Quiches (spinach/cheese/ fresh herbs, possibly asparagus)
Spring Salad with Strawberry-Vinegar Vinagrette

Sunday, April 18 2010 Seems we had a very small turnout joining Mistress Kate's to learn to make foods that are portable and storeable.

For the activity, bring meats, milk, fruits and vegetables that you want to process. There will be a smoker available along with a dehydrator. Bring addition if you have them. Also, we will likely be snacking as we go, but bring a dish to share to round out the table.

 

Saturday, March 20 2010 In honor of the Persian New Year (Now Ruz), the ladies of Ravenhyrst invited Caerthe's Cooks Guild to get together to have a Middle Eastern cooking/demo day on March 20th (the day of Now Ruz).

We were wonderfully hosted by Kesh and Albert and watched (as well as got hands on) with the preparation of our favorite ME dishes (Lady Maire, Duchess Elisheva, Lady Hannah, and Milady Kesh will be peforming the demonstrations) . There will be vegetarian dishes (courtesy of Lady Hannah) as well as a Persian khoresh (a stew) containing lamb, dried limes and spring herbs that is traditional for this holiday, as well as a savory spread of roasted red peppers and other delights. Duchess Elisheva will produce a luscious dessert, while Lady Maire will demonstrate how to make nan (which, as well as being Indian, is also the Farsi word for "bread", and is very close to a type of bread called sangyak that is produced throughout Persia to this day).

Everything was amazingly yummy and photos should be up next week.

We pondered future meetings, past meetings, upcoming events. A good time was had by all. Thank you Kate for organizing, and sorry your mundane obligations prevented you from staying longer.

An added thank you from your web-kitty to all those who brought treats for the Outlands Queens Tea at Estrella and for the Outlands Rapier Tournament Prize Basket. Thank you for your generosity!!!

 

Sunday, January 17, 2010 The theme is Middle-Eastern foods. Mika will roast a lamb leg, Ursula will prepare another main dish (Moorish chicken?).
Please bring a side dish, sauce or other accompaniment to share. If you have a period recipe you'd like to try, bring that too.
With Unser Hafen's Winter Oasis pot luck on January 30th, and other upcoming Middle Eastern themed events, this is a perfect opportunity to try something new or enhance a favorite recipe. (Sorry Kate, I can't find your write up, I know I saw it, but...)
